I’m Michelle. I went vegetarian at 13, much to the chagrin my of my parents, who viewed this move as some sort of cultural rebellion. It wasn’t; I just decided I liked animals too much to eat them. Sixteen years later, I’d never go back but I do miss traditional Chinese food. So through experimentation, I’ve come up with ways to veganize my favorite recipes.
